Pay through a site like PayPal. PayPal allows you to make a paper trail and makes the buyer commit before you send anything or they send anything. PayPal also will create an invoice. If there is an issue or fraud, it can be submitted to PayPal as an unpaid item dispute or to your bank as proof for a reimbursement.
