I order a bike with hydraulic brakes. Will I need to add the fluid and bleed them or will they come set up? Will the front and rr deraillers come adjusted or will I need to adjust them?

The hydraulic brakes are installed, filled, bled and ready to go. You might need to adjust the positioning of the levers to meet your size and riding preference. The front and rear derailleurs will definitely need adjustment. YouTube has many videos on how to complete the process; it's not difficult if you follow the process, but It can be frustrating if you are blindly turning adjustment screws and knobs.

In my experience, no. The brakes were bled and adjusted. Inhave since had to bkeed them & replace the pads, but only after a thousand or so miles.
However, anything is possible, so be prepared for any situation by finding a compatible bleed kit & fluid. Even if you don't need them now, you will eventually & it'll save you time to have them on hand when you do.
