IS it possible to have the staff sign an NDA (Non-disclosure agreement) or speaking to someone before giving out too much info on the invention?

Once you submit your idea (without giving too much detail) you will be assigned to the best team member able to help you with your project. We have no problem signing an NDA once that process has been started.
